I was recently joined by my good friend and colleague, Michelle Estrada, for two of our November At the Table shows featuring ethnic food traditions! Michelle made the best tostadas, and what made them even better was the simplicity! You can prep the ingredients ahead of time to have a quick 5-minute, one-plate meal for a busy weeknight. Enjoy!



  • 8 tostadas (crispy whole corn tortilla)
  • 1 cup fat-free refried beans
  • 12 ounces shredded rotisserie chicken (or any other meat. Lean beef or shrimp would be delicious)
  • 1 chopped or sliced Roma tomato
  • 1 cup thinly sliced romaine lettuce
  • 1 cup of chunky salsa
  • 1 cup queso fresco
  • 1 cup of crema mexicana (optional)


  1. Heat beans and chicken separately in the microwave or in small pots on the stove until hot throughout.
  2. Spread tostadas with beans, then top with lettuce, chicken, tomatoes, cheese, and salsa.
  3. Serve immediately.

**Other yummy toppings include guacamole & pico de gallo. If you can’t find crema, sour cream or Greek yogurt would work as well.
