Vegetarian Stuffed Peppers
Adapted from University of Nebraska Lincoln Nutrition Education Program
Ingredients- 4 red or green bell peppers
- 2 cups cherry tomatoes
- 1 small onion or 1/2 large onion
- 1 cup basil leaves or 1 tablespoon dried basil
- 3 garlic cloves
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Preheat oven to 425°F. Lightly oil a large shallow baking pan and set aside.
- Cut peppers in half lengthwise and remove seeds.
- Arrange peppers cut sides up in baking pan and lightly oil cut edges of stems.
- Halve cherry tomatoes and chop onion and basil. Finely chop garlic.
- In a bowl, toss tomatoes, onion, basil, garlic, oil, salt, and pepper to taste.
- Divide mixture into peppers and roast in oven until tender, about 20 minutes.
