This was the second dish we made during our Cook Smart, Eat Smart cooking series. For this easy meal you can prep several of the ingredients ahead and throw it together when ready to enjoy! Makes around 8 Pitas
Ingredients- 1 ½ lbs chicken (boneless skinless breasts or tenderloins)
- 4 bell peppers
- 2 onions
- Pitas (find in the deli/cheese section on a kiosk)
- Tzatziki sauce (find in the deli/cheese section by the hummus)
- Reduced fat feta cheese
- Spinach
- Seasonings of choice
- Olive oil
- Preheat oven to 425°F
- Cut bell peppers and onions into strips. Place in a bowl with 1-2 tbsp olive oil, salt and pepper to taste. Throw on a baking sheet and bake for 20 minutes.
- While the peppers and onions are cooking, cut chicken into bite size pieces. Place in a bowl with seasonings of choice (I did salt, pepper, about ½ tsp ginger powder, 1 tsp dried onions, 1 tsp Italian seasoning, and about 2 tbsp Italian dressing). Mix well.
- Heat a large frying pan over medium to medium high heat. Add in about 1 tbsp olive oil. When hot, add in chicken and cook until cooked through (about 8 minutes, flipping once).
- Optional: Toast pitas with a little olive oil and sprinkle of salt.
- Start with tzatziki sauce along the middle of the pita, sprinkle with feta, then sprinkle with chopped spinach. Add in your chicken, peppers, and onions. Fold it up and enjoy!
