What does happen if you give a little piglet a delicious pancake? I don’t know! But I do know that you and your family will have fun making pancakes for breakfast, lunch, or even dinner!

Pancakes are made from flour, which is a grain. Grains are wonderful for us, as they provide us with both energy and fiber for our digestive system. Whole grains (whole wheat products) are the very best, as they include the entire grain and give us the most health benefits.

This recipe also provides opportunities for all ages: little ones can help stir the batter, older ones can help measure the ingredients, and adults can use the stove to cook them, so there’s no reason why everyone couldn’t be involved!

Whole Grain Pancakes

Ingredients:

  • 1 cup whole-wheat flour
  • ¼ cup old fashioned oats
  • 1 TBSP cornmeal
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 egg
  • 1 banana, mashed
  • 1 cup low-fat or fat-free milk
  • 1 TBSP oil
  • Nonstick cooking spray (or additional oil)

Directions:

  1. Heat pan or griddle over medium heat
  2. Mix dry ingredients together in a bowl
  3. In another bowl, beat the egg with a whisk. Add the banana, milk, and oil to the egg
  4. Add the liquid ingredients to the dry ingredients and stir gently, just until ingredients are combined. Do not over-mix. The batter may be lumpy, but that is okay. Let batter sit for about 5 minutes
  5. Spray the pan or griddle with nonstick cooking spray (or a small amount of oil). Pour ½ cup of batter at a time into the pan or onto the griddle. Cook until the edges become crisp and bubbles have formed on the top, about 2 minutes. Flip the pancake and continue cooking until the bottom is browned, about 1-2 minutes more
  6. Serve hot with fruit or sugar-free syrup

Pro tips:

  • Add some unsweetened cocoa powder and vanilla extract to make a delicious chocolate pancake!
  • Slice some extra bananas and make a banana pancake sandwich!
