Jimmi Buell, Extension Family & Consumer Science Agent for Polk County

The Polk County Wellness Coalition (formerly Polk Fit, Fresh and Friendly), a nonprofit coalition of health and wellness professionals in Polk County, NC, will host a free community HealthTalk on “Eating Healthy During the Holidays” on Thursday, Dec. 5, at 5:30 p.m. at the N.C. Cooperative Extension of Polk County office. Extension Agent Jimmi Buell will demonstrate how to prepare healthy holiday dishes while discussing tips for staying on track with attendees. Afterwards, everyone will enjoy sampling what will be prepared.

“This is going to be a lot of fun with great cooking information,” Board Member Buell said. “I often host cooking classes for selected and targeted groups of people, like men who don’t know how to cook, or people looking to change their diet and people really seem to enjoy the experience. I make it fun and tasty, affordable and as easy as possible. It is usually very social with people meeting and making new friends. It is my hope that people who are looking for ways to have great holiday food while avoiding the trappings of high-fat, high-salt, and high-carbs dishes will come to see what my ideas are. At the very least, you’ll get to eat what you’ll see me make.”

Buell is a long-time N.C. Cooperative Extension Family and Consumer Sciences Agent with Polk County, in addition to being a founding Wellness Coalition board member. As part of her work, she is well known for her cooking with an emphasis on healthy eating and local sourcing. She often hosts cooking events and demos in her specially designed workspace at the office, which is at 79 Carmel Lane, Columbus.

Polk County Wellness Coalition coordinates and hosts a free community HealthTalk most months on various health-related topics, such as new health services in the community, veterans’ affairs, and attention deficit disorder. The one-hour events are always free and designed for the general public’s enjoyment and better understanding of local health and wellness opportunities. The events are held in various convenient locations in Polk County, such as the library or community college.
